Ingredients
1 cup fresh pineapple chunks or ¾ cup pineapple juice
½ cup coconut cream (shake well)
¾ cup coconut water or light coconut milk
1 tsp blue spirulina powder
1 lime, juiced
1.5 oz white rum (optional)
1 cup ice
Garnish: toasted coconut flakes, pineapple wedge, fresh mint
Instructions
1. Rim glasses with lime juice and dip into toasted coconut flakes.
2. In a blender, combine pineapple, coconut cream, coconut water, spirulina, lime juice, ice, and rum (if using).
3. Blend on high until smooth and creamy.
4. Pour into glasses and garnish with pineapple wedge and mint.
5. Serve chilled and enjoy immediately.
Notes
For a halal mocktail, skip the rum and add sparkling coconut tonic or lychee juice.
To make it creamier, freeze coconut milk in cubes and use instead of ice.
Sweeten with ½ tsp agave or honey if desired.
Leftovers can be frozen into popsicles.
