  1. In a small saucepan, heat olive oil over medium heat and sauté smashed garlic until golden.
  2. Remove from heat and stir in za’atar, cumin, and sumac. Let it cool slightly.
  3. In a large bowl, combine the butter beans, chickpeas, olives, artichokes, and fresh herbs.
  4. Add the thinly sliced red onion, lemon juice, and zest. Let sit for 10–15 minutes to pickle.
  5. Pour the cooled garlic-spice oil over the salad and toss everything together until well coated.
  6. Season lightly with kosher salt, stir, and let marinate in the fridge for at least 2 hours or overnight.
  7. Serve chilled over toast, in pitas, or with grains.

Notes

This salad keeps well for up to 5 days in the fridge and tastes better the next day. Add toasted nuts for crunch or a dollop of labneh for creaminess.
