Ingredients
2 large flour tortillas
1 cup shredded cheddar cheese (or Mexican blend)
1 cup cooked and seasoned ground beef (or chicken)
1/2 cup cooked rice (Mexican or cilantro-lime)
1/4 cup sour cream or chipotle mayo
1/4 cup tortilla strips or crushed chips
Optional: sliced avocado, jalapeños, cilantro, hot sauce
Instructions
1. Heat a skillet over medium heat.
2. Sprinkle 1/2 cup cheese directly on the skillet.
3. Place one tortilla over the cheese and press lightly.
4. When cheese is golden, remove tortilla and place cheese-side down.
5. Layer with beef, rice, sauce, chips, and more cheese.
6. Fold burrito-style and return to skillet, seam-side down.
7. Toast 1 more minute to seal.
8. Repeat with second tortilla.
9. Slice and serve hot.
Notes
For vegan: use plant-based cheese and protein.
For spicy: add jalapeños or spicy salsa.
Freezes well for up to 2 months if wrapped properly.
