- 2 boneless, skinless chicken breasts (halved into cutlets)
- 1 cup Italian breadcrumbs (or panko for extra crunch)
- 1/2 cup grated parmesan cheese
- 1 large egg
- 1/2 cup all-purpose flour
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1/2 cup marinara sauce (store-bought or homemade)
- 1/2 cup shredded mozzarella cheese
- Olive oil spray
Instructions
- Slice chicken breasts into even cutlets.
- Set up three dredging bowls: one with flour, garlic powder, salt, and pepper; one with whisked egg; one with breadcrumbs and parmesan mixed.
- Press each chicken cutlet into flour, then egg, then breadcrumb mixture. Let rest on a plate for 5–10 minutes.
- Preheat air fryer to 375°F (190°C) for 3–5 minutes and spray basket with oil.
- Place chicken cutlets in a single layer in basket, spray tops lightly with oil.
- Air fry for 10–12 minutes, flipping halfway.
- At 8-minute mark, spoon marinara over each cutlet and top with mozzarella.
- Continue cooking until cheese melts and internal temp reaches 165°F.
- Let rest for 2 minutes before serving.
Notes
Letting the breaded chicken rest before air frying helps the coating stick. Don’t overcrowd the basket to maintain maximum crisp.
